Our client is an entertainment and hospitality operator with a portfolio of venues across the UK, offering a diverse range of leisure concepts and cinema alongside a quality food and beverage operation and providing an exceptional customer experience. They have experienced fantastic growth over the last 10+ years, and with many new openings in the pipeline this is a truly exciting time to join the company.

We are currently recruiting for a Restaurant General Manager to manage a brand new food and beverage operation within an innovative new leisure development. This brasserie style restaurant will offer table service, a 100% fresh menu and views overlooking the canal. The Restaurant Manager will be responsible for the day to day operations of the restaurant whilst ensuring financial profitability. The ideal candidate will have experience of managing a premium, service focused restaurant and will be skilled in motivating and leading teams; demonstrating what exceptional service looks like and inspiring others to do the same. This position could suit an experienced Deputy Manager looking to take the next step in their career.

Key Responsibilities:

  • Assess productivity and achieve daily, weekly and periodical financial targets including sales, EBITDA, gross profit and labour.
  • Liaise with the Senior Business Manager and Executive Chef to ensure menu products are maximised in the restaurant and bar to strike the right balance between range, price, quality and margin.
  • Deliver an exceptional guest experience by acting as a role model to the site team and continuously exhibiting a high level of service and attention to detail.
  • Follow stock control procedures and guidelines; undertake weekly and monthly stock takes, analyse variances and take corrective actions as required.
  • Oversee efficient and effective recruitment, onboarding and training of the food & beverage team.
  • Maintain a high employee retention rate through effective communication, team meetings, training, regular appraisals, monthly 1 to 1's with direct reports and consistent reward, recognition, coaching and mentoring.
  • Ensure that all members of your team have completed the required training for their role and develop a culture of coaching and mentoring to support personal development and career aspirations.
  • Responsible for accurate rota planning based on forecasted sales and labour budget.
  • Responsible for the maintenance of Food Safety, Health and Safety, Fire Safety and licencing law in a compliant and safe manner, achieving the highest audits scores possible.
  • Ensure all private/corporate hires and site planned events are delivered successfully and according to expected requirements.
